Ingredients

  • 150 grams (5 oz) dark brown sugar
  • 150 grams (5 oz) unsalted butter, softened
  • 2 large eggs
  • 150 ml (5 fl oz) strong brewed black tea, cooled
  • 100 grams (3.5 oz) crystallized ginger, chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons milk (optional, for glaze)

Instructions

  1. Preheat your oven to 160°C (320°F). Grease and line a loaf tin (approximately 2 lb capacity) with parchment paper.
  2. Cream together the softened butter and dark brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated.
  4. Sift the self-raising flour, ground ginger, ground cinnamon, ground nutmeg, and salt into the mixture. Gently fold until just combined.
  5. Gradually add the cooled strong black tea, mixing until smooth. Fold in the chopped crystallized ginger.
  6. Transfer the batter into the prepared loaf tin, smoothing the top.
  7. Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean. Cover with aluminum foil if browning too quickly.
  8. Cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
  9. If desired, mix 2 tablespoons of milk with icing sugar for a glaze and drizzle over the cooled loaf.
  10. Slice and serve on a simple white plate with tea.
