- 225 grams (8 oz) self-raising flour
- 150 grams (5 oz) dark brown sugar
- 150 grams (5 oz) unsalted butter, softened
- 2 large eggs
- 150 ml (5 fl oz) strong brewed black tea, cooled
- 100 grams (3.5 oz) crystallized ginger, chopped
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons milk (optional, for glaze)
Instructions
- Preheat your oven to 160°C (320°F). Grease and line a loaf tin (approximately 2 lb capacity) with parchment paper.
- Cream together the softened butter and dark brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- Sift the self-raising flour, ground ginger, ground cinnamon, ground nutmeg, and salt into the mixture. Gently fold until just combined.
- Gradually add the cooled strong black tea, mixing until smooth. Fold in the chopped crystallized ginger.
- Transfer the batter into the prepared loaf tin, smoothing the top.
- Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean. Cover with aluminum foil if browning too quickly.
- Cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
- If desired, mix 2 tablespoons of milk with icing sugar for a glaze and drizzle over the cooled loaf.
- Slice and serve on a simple white plate with tea.
Notes
- Soak chopped crystallized ginger in brewed tea for added flavor.
- Store in an airtight container for several days; often tastes better the next day.
