Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Remove the beef and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Stir in the tomato paste and cook for 2 minutes.
  6. Add the beef back to the pot.
  7. Pour in the beef broth and Worcestershire sauce.
  8. Add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  9. Bring to a boil, then reduce heat and simmer for 2 hours.
  10. Remove bay leaf before serving.

Notes

  • You can add other vegetables like peas or green beans.
  • For a thicker stew, mix 2 tablespoons of flour with water and add it in.
