Ingredients

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

Instructions
- In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, everything bagel seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
