Delicious vegetarian quesadillas made with fresh ingredients from the farmers market.
Ingredients

- 2 whole wheat tortillas
- 1 cup shredded cheese
- 1 cup mixed vegetables (bell peppers, zucchini, onions)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add mixed vegetables, cumin, garlic powder, salt, and pepper.
- Sauté until vegetables are tender.
- Place one tortilla in the skillet.
- Sprinkle half of the cheese over the tortilla.
- Add the sautéed vegetables on top of the cheese.
- Sprinkle the remaining cheese over the vegetables.
- Top with the second tortilla.
- Cook until the bottom tortilla is golden, then flip and cook the other side.
- Remove from skillet and cut into wedges.
Notes
- Use any seasonal vegetables you prefer.
- Serve with salsa or guacamole.
- Adjust seasoning to your taste.
