Description

Delicious vegetarian quesadillas made with fresh ingredients from the farmers market.


Ingredients

  • 2 whole wheat tortillas
  • 1 cup shredded cheese
  • 1 cup mixed vegetables (bell peppers, zucchini, onions)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add mixed vegetables, cumin, garlic powder, salt, and pepper.
  3. Sauté until vegetables are tender.
  4. Place one tortilla in the skillet.
  5. Sprinkle half of the cheese over the tortilla.
  6. Add the sautéed vegetables on top of the cheese.
  7. Sprinkle the remaining cheese over the vegetables.
  8. Top with the second tortilla.
  9. Cook until the bottom tortilla is golden, then flip and cook the other side.
  10. Remove from skillet and cut into wedges.
