A creamy and savory pasta dish inspired by French onion soup.
Ingredients

- 8 oz pasta
- 2 large onions, thinly sliced
- 3 tbsp butter
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup Gruyere cheese, shredded
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large skillet, melt butter over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Stir in beef broth and thyme, simmer for 5 minutes.
- Add heavy cream and bring to a simmer.
- Mix in cooked pasta and half of the cheese.
- Top with remaining cheese and broil until golden.
Notes
- Use any pasta shape you prefer.
- Adjust seasoning to your taste.
- For a vegetarian version, use vegetable broth.
