Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for about 10 minutes, stirring occasionally.
- Add sliced onion and bell pepper to the skillet.
- Season with salt and pepper.
- Cook for an additional 10-15 minutes until potatoes are golden brown and tender.
