Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Push vegetables to the side and crack in the eggs, scrambling them until fully cooked.
- Add cooked rice to the skillet and mix with vegetables and eggs.
- Pour soy sauce and sesame oil over the rice, stirring to combine.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.

- Use day-old rice for better texture.
- Feel free to add protein like chicken or shrimp.
