  • 1 teaspoon ground cinnamon

  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk or plant-based milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a loaf pan.
  3. In a bowl, mix dried fruits and nuts.
  4. In another bowl, combine flour, baking powder, cinnamon, and salt.
  5. In a separate bowl, whisk together honey, oil, eggs, and milk.
  6. Combine wet and dry ingredients, then fold in fruit and nut mixture.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.
