- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1/4 cup mint chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan.
- In a saucepan, melt the butter and mix in the sugar.
- Remove from heat and stir in the eggs and vanilla.
- Add flour, cocoa powder, and salt; mix until smooth.
- In a separate bowl, beat the cream cheese and powdered sugar until creamy.
- Fold in the mint chocolate chips into the cream cheese mixture.
- Pour half of the brownie batter into the pan.
- Spread the cream cheese mixture over the batter.
- Top with the remaining brownie batter.
- Swirl with a knife to create a marbled effect.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares.
Notes
- Store leftovers in an airtight container.
- For a stronger mint flavor, add a few drops of mint extract.
- Serve with whipped cream for added richness.
