Description
Garlic Herb Chicken served with creamy mashed potatoes.
Ingredients

- 4 chicken fillets
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt to taste
- Pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix garlic, olive oil, rosemary, thyme, salt, and pepper.
- Coat chicken fillets with the garlic herb mixture.
- Place chicken in a baking dish and bake for 25-30 minutes.
- While chicken is baking, boil potatoes in salted water until tender.
- Drain potatoes and mash them with milk and butter.
- Serve chicken with mashed potatoes.
Notes
- Adjust herbs according to your preference.
- For richer mashed potatoes, add more butter.
