Ingredients

  • 4 chicken fillets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt to taste
  • Pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix garlic, olive oil, rosemary, thyme, salt, and pepper.
  3. Coat chicken fillets with the garlic herb mixture.
  4. Place chicken in a baking dish and bake for 25-30 minutes.
  5. While chicken is baking, boil potatoes in salted water until tender.
  6. Drain potatoes and mash them with milk and butter.
  7. Serve chicken with mashed potatoes.
