Description

A delicious meal featuring garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried herbs (thyme, rosemary, oregano)
  • Salt and pepper to taste
  • 4 large potatoes, peeled and chopped
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 cups carrots, sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, herbs, salt, and pepper.
  3. Coat chicken breasts with the mixture and place them in a baking dish.
  4. Bake chicken for 25-30 minutes until cooked through.
  5. Meanwhile, boil potatoes in salted water until tender.
  6. Drain potatoes and mash with milk and butter until smooth.
  7. In a pan, melt butter and add sliced carrots and brown sugar.
  8. Sauté carrots until tender and glazed.
  9. Serve chicken with mashed potatoes and glazed carrots.

  • For creamier mashed potatoes, add more milk or butter.
  • Carrots can be steamed if preferred.
