Ingredients

- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried herbs (thyme, rosemary, oregano)
- Salt and pepper to taste
- 4 large potatoes, peeled and chopped
- 1/2 cup milk
- 4 tablespoons butter
- 4 cups carrots, sliced
- 2 tablespoons brown sugar
- 2 tablespoons butter
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, herbs, salt, and pepper.
- Coat chicken breasts with the mixture and place them in a baking dish.
- Bake chicken for 25-30 minutes until cooked through.
- Meanwhile, boil potatoes in salted water until tender.
- Drain potatoes and mash with milk and butter until smooth.
- In a pan, melt butter and add sliced carrots and brown sugar.
- Sauté carrots until tender and glazed.
- Serve chicken with mashed potatoes and glazed carrots.
Notes
- Adjust herbs to your taste.
- For creamier mashed potatoes, add more milk or butter.
- Carrots can be steamed if preferred.
