  • 1/2 cup vegetable oil – 120g
  • 1 cup water – 240ml
  • 1/2 cup pink food coloring (or blue for a boy) – about 120ml (adjust depending on the desired shade)
  • 1 cup butter (room temperature) – 227g
  • 3 cups powdered sugar – 360g
  • 1 teaspoon vanilla extract – 5g
  • 1/4 cup heavy cream – 60ml

Instructions

  • Preheat your oven to 350°F (175°C). Line a cupcake tin with cupcake liners.

  • Prepare the cupcake batter: In a large bowl, combine the vanilla cake mix, eggs, vegetable oil, and water. Mix until smooth.

  • Separate the batter into two bowls. Add a few drops of pink food coloring to one and blue food coloring to the other. Mix until the colors are evenly distributed.

  • Fill the cupcake liners: Spoon a small amount of pink batter into each cupcake liner, then top with a spoonful of blue batter. Do not mix; allow the colors to sit on top of each other for a marbled effect.

  • Bake the cupcakes: Place the cupcake tin in the preheated oven and bake for 18 minutes or until a toothpick inserted comes out clean.

  • Let the cupcakes cool completely on a wire rack.

  • Prepare the frosting: In a separate bowl, beat the butter with an electric mixer until fluffy. Gradually add powdered sugar, vanilla extract, and heavy cream, continuing to mix until smooth.

  • Frost the cupcakes: Once the cupcakes have cooled, pipe the buttercream frosting onto each cupcake. You can use a piping bag for a decorative swirl or simply spread the frosting with a knife.
