Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup semi-sweet chocolate, melted
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and melted chocolate, mixing until combined.
  5. Incorporate eggs one at a time, mixing well after each addition.
  6. Fold in coconut and pecans.
  7. Pour mixture over the crust in the springform pan.
  8. Bake for 55-60 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes
