- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup semi-sweet chocolate, melted
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and melted chocolate, mixing until combined.
- Incorporate eggs one at a time, mixing well after each addition.
- Fold in coconut and pecans.
- Pour mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- Serve with whipped cream if desired.
- Store leftovers in the refrigerator.
- Can be topped with additional coconut and pecans for garnish.
