A cozy and flavorful Ginger Apple Tea Cake perfect for pairing with tea or coffee.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
- 2 cups apples, peeled, cored, and chopped (about 2 medium apples)
- 1 tablespoon sugar (for sprinkling on top)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
- Gently fold in the chopped apples until evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle the tablespoon of sugar evenly over the top of the batter.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Slice the cake and serve it warm or at room temperature. Enjoy the cozy flavors and delightful aroma!
Notes
- For extra flavor, consider adding chopped walnuts or pecans to the batter.
- Drizzle a simple glaze made from powdered sugar and milk over the cooled cake for added sweetness and decoration.
- Store any leftovers in an airtight container at room temperature for up to three days.
