- Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
- Prepare the date mixture: In a small bowl, combine the chopped dates and hot water. Let them sit for about 10 minutes to soften, then mash them slightly with a fork to create a chunky paste. Set aside.
- Mix wet ingredients: In a large mixing bowl, whisk together the molasses, brown sugar, and vegetable oil until well combined. Add the eggs, one at a time, mixing well after each addition.
- Combine dry ingredients: In another bowl, sift together the flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
- Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. Fold in the date mixture until evenly distributed throughout the batter.
- Bake the cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
