- 1 cup rolled oats
- 1 cup boiling water
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger

- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1/4 cup molasses
- 1/2 cup crystallized ginger, chopped
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, combine the rolled oats and boiling water. Let them sit for about 20 minutes to soften.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground ginger, and ground cinnamon. Set aside.
- In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 3-5 minutes.
- Add the eggs, one at a time, mixing well after each addition. Then, stir in the molasses until fully combined.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the soaked oats. Begin and end with the dry ingredients. Mix until just combined.
- Gently fold in the chopped crystallized ginger, ensuring it is evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, dust the top of the cake with powdered sugar. Slice and serve as a delightful accompaniment to tea or coffee.
Notes
- For an extra touch, you can add a glaze made from powdered sugar and a little water or lemon juice on top of the cake.
- This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
