  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1/4 cup molasses
  • 1/2 cup crystallized ginger, chopped
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, combine the rolled oats and boiling water. Let them sit for about 20 minutes to soften.
  3. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground ginger, and ground cinnamon. Set aside.
  4. In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 3-5 minutes.
  5. Add the eggs, one at a time, mixing well after each addition. Then, stir in the molasses until fully combined.
  6. Gradually add the dry ingredient mixture to the butter mixture, alternating with the soaked oats. Begin and end with the dry ingredients. Mix until just combined.
  7. Gently fold in the chopped crystallized ginger, ensuring it is evenly distributed throughout the batter.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  10. Once cooled, dust the top of the cake with powdered sugar. Slice and serve as a delightful accompaniment to tea or coffee.

Notes

  • For an extra touch, you can add a glaze made from powdered sugar and a little water or lemon juice on top of the cake.
