- 200 grams (7 oz) dark brown sugar
- 100 grams (3.5 oz) unsalted butter, softened
- 200 grams (7 oz) treacle (or molasses)
- 2 large eggs
- 250 grams (9 oz) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 200 milliliters (7 fl oz) milk
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 160°C (320°F). Grease and line a 20 cm (8-inch) round cake tin with parchment paper.
- In a large mixing bowl, beat the softened butter and dark brown sugar together until light and fluffy, about 3-5 minutes.
- Pour in the treacle and add the eggs, one at a time, mixing well after each addition.
- In a separate bowl, sift together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
- Pour the batter into the prepared cake tin and smooth the top with a spatula.
- Place the cake in the preheated oven and bake for about 50-60 minutes, or until a skewer inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the tin for about 10 minutes. Then transfer it to a wire rack to cool completely.
- Once the cake is completely cool, dust the top lightly with powdered sugar.
- Slice the cake and serve it on a simple white plate.
Notes
- For extra flavor, consider adding finely chopped crystallized ginger to the batter.
- This cake can be stored in an airtight container for several days, and its flavors will deepen over time.
- Serve with whipped cream or vanilla ice cream for a delightful dessert.
