Ingredients

  • 100 grams (3.5 oz) unsalted butter, softened
  • 200 grams (7 oz) treacle (or molasses)
  • 2 large eggs
  • 250 grams (9 oz) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 200 milliliters (7 fl oz) milk
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 160°C (320°F). Grease and line a 20 cm (8-inch) round cake tin with parchment paper.
  2. In a large mixing bowl, beat the softened butter and dark brown sugar together until light and fluffy, about 3-5 minutes.
  3. Pour in the treacle and add the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, sift together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
  6. Pour the batter into the prepared cake tin and smooth the top with a spatula.
  7. Place the cake in the preheated oven and bake for about 50-60 minutes, or until a skewer inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the tin for about 10 minutes. Then transfer it to a wire rack to cool completely.
  9. Once the cake is completely cool, dust the top lightly with powdered sugar.
  10. Slice the cake and serve it on a simple white plate.
