Ingredients

- 2 ripe bananas, mashed
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed bananas, brown sugar, and melted butter.
- Add the egg and vanilla extract, and blend well.
- In another bowl, combine flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt.
- Gradually mix the dry ingredients into the wet mixture.
- If using, fold in chopped walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store leftovers in an airtight container.
- Can be frozen for up to 3 months.
- Adjust spices to taste.
