Ingredients

  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mashed bananas, brown sugar, and melted butter.
  3. Add the egg and vanilla extract, and blend well.
  4. In another bowl, combine flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet mixture.
  6. If using, fold in chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.
