- 1 cup gingerbread cookies, crushed
- 1/2 cup cream cheese, softened
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 8 ounces dark chocolate, chopped
- 1 tablespoon coconut oil
Instructions
- In a bowl, combine the crushed gingerbread cookies and cream cheese.
- Add cinnamon and nutmeg. Mix until well combined.
- Form the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for 30 minutes.
- Melt the dark chocolate and coconut oil in a microwave or double boiler.
- Dip each truffle into the melted chocolate, coating completely.
- Return the coated truffles to the baking sheet.
- Chill again until the chocolate hardens.

- Store truffles in an airtight container in the refrigerator.
- For a decorative touch, sprinkle with additional crushed gingerbread cookies before the chocolate hardens.
