- 1/4 cup lemon curd
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until smooth.
- Add the egg, lemon curd, and vanilla extract. Mix well.
- In another bowl, whisk together the gluten-free flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until lightly golden.
- Let cool before serving.
