Delicious gluten free peppermint sugar cookies with a creamy sour cream touch.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar.
  3. Add sour cream, egg, vanilla, and peppermint extract. Mix well.
  4. In another bowl, combine gluten free flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture. Stir until combined.
  6. Fold in crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto baking sheets.
  8. Bake for 10-12 minutes until edges are golden.
  9. Let cool on baking sheets for 5 minutes, then transfer to wire racks.
