Ingredients

  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 1/2 cups gluten free flour blend
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegan chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, coconut sugar, maple syrup, and melted coconut oil.
  3. In another bowl, combine gluten free flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture.
  5. If desired, fold in vegan chocolate chips.
  6. Drop spoonfuls of dough onto a lined baking sheet.
  7. Bake for 15-20 minutes or until edges are golden.
  8. Let cool before serving.
