Ingredients

- 1 cup pumpkin puree
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 1/2 cups gluten free flour blend
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup vegan chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, coconut sugar, maple syrup, and melted coconut oil.
- In another bowl, combine gluten free flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture.
- If desired, fold in vegan chocolate chips.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 15-20 minutes or until edges are golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Substitute maple syrup with agave syrup if preferred.
