Delicious gluten free vegan spring rolls filled with fresh vegetables.


Ingredients

  • Rice paper wraps – 10 sheets
  • Carrot – 1 medium, julienned
  • Cucumber – 1 medium, julienned
  • Red bell pepper – 1 medium, julienned
  • Avocado – 1 medium, sliced
  • Fresh cilantro – 1/2 cup
  • Lettuce leaves – 1 cup, shredded
  • Soy sauce – 2 tablespoons
  • Sesame oil – 1 teaspoon

Instructions

  1. Prepare all vegetables by slicing and julienning them.
  2. Soak rice paper wraps in warm water until soft.
  3. Place a wrap on a flat surface.
  4. Add a small amount of each vegetable and some cilantro in the center.
  5. Fold the sides over the filling, then roll tightly from the bottom up.
  6. Repeat with remaining wraps and filling.
  7. Serve with soy sauce mixed with sesame oil.

Notes

  • Keep wraps covered with a damp cloth to prevent drying.
