Description

A moist and sweet cake made with golden syrup and dates.


Ingredients

  • 200g pitted dates
  • 250ml boiling water
  • 100g golden syrup
  • 100g brown sugar
  • 2 large eggs
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Chop the dates and soak them in boiling water for 10 minutes.
  3. In a bowl, mix golden syrup and brown sugar until combined.
  4. Add the eggs and vanilla extract to the mixture and stir well.
  5. In another bowl, combine self-raising flour and baking powder.
  6. Gradually add the flour mixture to the wet ingredients.
  7. Fold in the soaked dates with their water.
  8. Pour the batter into a greased cake tin.
  9. Bake for 35-40 minutes or until a skewer comes out clean.
  10. Let it cool before serving.
