A moist and sweet cake made with golden syrup and dates.
Ingredients
Scale
- 200g pitted dates
- 250ml boiling water
- 100g golden syrup
- 100g brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 180°C (350°F).
- Chop the dates and soak them in boiling water for 10 minutes.
- In a bowl, mix golden syrup and brown sugar until combined.
- Add the eggs and vanilla extract to the mixture and stir well.
- In another bowl, combine self-raising flour and baking powder.
- Gradually add the flour mixture to the wet ingredients.
- Fold in the soaked dates with their water.
- Pour the batter into a greased cake tin.
- Bake for 35-40 minutes or until a skewer comes out clean.
- Let it cool before serving.
Notes
- Serve warm with cream or ice cream.
- Store in an airtight container for up to 3 days.
