Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add oil, eggs, and vanilla. Mix until smooth.
  4. Fold in carrots, pineapple, and walnuts.
  5. Pour batter into greased cake pans.
  6. Bake for 25-30 minutes until a toothpick comes out clean.
  7. Let cakes cool before frosting.
