Ingredients

– 1 ½ cups (180g) all-purpose flour (or gluten-free flour blend)

– 1 cup (200g) granulated sugar

– ½ cup (120ml) extra virgin olive oil

– 2 large eggs

– ½ cup (120ml) milk (or plant-based milk)

– 1 teaspoon vanilla extract

– Zest of 1 lemon

– 2 teaspoons baking powder

– ¼ teaspoon salt

– 1 ½ cups (225g) fresh seedless grapes (red or black work best)

Optional for Garnish: 

– Powdered sugar for dusting

– Additional grapes or mint leaves


Instructions

1. Preheat the Oven:  

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.

2. Prepare the Grapes:  

Wash and dry the grapes. If they’re large, slice them in half to prevent sinking in the batter. Set aside.

3. Mix the Dry Ingredients:  

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

4. Combine the Wet Ingredients:  

In a separate bowl, beat the eggs and whisk in olive oil, milk, vanilla extract, and lemon zest until smooth.

5. Create the Batter:  

Gradually add the wet ingredients to the dry mixture. Stir gently until you have a smooth, lump-free batter. Be careful not to overmix.

6. Fold in the Grapes:  

Gently fold in about 1 cup of the grapes, reserving the remaining ½ cup for the top of the cake.

7. Bake the Cake: 

Pour the batter into the prepared cake pan and smooth the top with a spatula. Scatter the reserved grapes over the surface of the batter for a beautiful presentation.

8. Bake and Cool:  

Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

9. Garnish and Serve:  

Dust the top of the cake with powdered sugar before serving. Garnish with additional grapes or mint leaves if desired.
