  • Zest of 1 grapefruit
  • ½ cup (120 ml) sour cream or Greek yogurt
  • 1 cup (120 g) powdered sugar (for glaze)
  • 23 tablespoons fresh grapefruit juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract, grapefruit juice, and grapefruit zest until combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the sour cream. Start and end with the flour mixture, mixing just until combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar and grapefruit juice until smooth.
