Ingredients

- 4 chicken fillet
- 2 cups chicken broth
- 1 cup uncooked rice
- 2 lemons (juiced)
- 3 cloves garlic (minced)
- 1 teaspoon oregano
- Salt (to taste)
- Pepper (to taste)
- 2 tablespoons olive oil
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with salt, pepper, and oregano.
- Cook chicken until browned on both sides, about 6-7 minutes per side.
- Remove chicken and set aside.
- Add garlic and sauté for 1 minute.
- Stir in rice and cook for 2 minutes.
- Add chicken broth and lemon juice, then bring to a boil.
- Return chicken to the pan, cover, and reduce heat.
- Simmer for 20 minutes or until rice is cooked and chicken is done.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate chicken in lemon juice for an hour.
- Serve with a side salad for a complete meal.
