Ingredients

- 4 chicken breasts
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and oregano.
- Grill the chicken for 6-7 minutes per side or until cooked through.
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together olive oil and lemon juice.
- Pour the dressing over the quinoa mixture and toss to combine.
- Slice the grilled chicken and serve over the quinoa salad.

- Adjust seasoning as per your taste.
- You can add olives for extra flavor.
