Description
A refreshing Greek lentil salad topped with feta cheese.
Ingredients
Scale
- 1 cup lentils
- 1/2 cup feta cheese, crumbled
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water.
- Cook lentils in boiling water for 20-25 minutes until tender.
- Drain lentils and let cool.
- In a large bowl, combine lentils, cucumber, tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve chilled or at room temperature.

- Adjust the feta quantity to your taste.
- Can be made a day in advance.
