A refreshing Greek lentil salad topped with feta cheese.


Ingredients

  • 1 cup lentils
  • 1/2 cup feta cheese, crumbled
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water.
  2. Cook lentils in boiling water for 20-25 minutes until tender.
  3. Drain lentils and let cool.
  4. In a large bowl, combine lentils, cucumber, tomatoes, red onion, and feta cheese.
  5. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  6. Pour dressing over salad and toss to combine.
  7. Serve chilled or at room temperature.
