Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes.
  2. Drain and let cool.
  3. In a large bowl, combine cooled potatoes, tomatoes, cucumber, onion, olives, and feta.
  4. In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
  5. Pour dressing over salad and toss gently to combine.
