Description
A refreshing and nutritious Greek quinoa salad packed with vegetables and feta cheese.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine cucumber, bell pepper, cherry tomatoes, red onion, feta cheese, olives, and parsley.
- Add cooled quinoa to the bowl.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss gently to combine all ingredients.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made a day in advance.
- Use any vegetables you prefer.
- Adjust the amount of feta to your liking.
