A refreshing and nutritious Greek quinoa salad packed with vegetables and feta cheese.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, combine quinoa and water. Bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let it cool.
  4. In a large bowl, combine cucumber, bell pepper, cherry tomatoes, red onion, feta cheese, olives, and parsley.
  5. Add cooled quinoa to the bowl.
  6. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  7. Toss gently to combine all ingredients.
  8. Chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made a day in advance.
  • Use any vegetables you prefer.
