A flavorful Greek dish made with rice and tomatoes.
Ingredients

- 2 cups of rice
- 4 cups of water or vegetable broth
- 2 large tomatoes, chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 3 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1/4 cup of fresh parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chopped tomatoes, salt, pepper, and oregano. Cook for 5 minutes.
- Add rice, stir well to combine.
- Pour in water or broth, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork and stir in parsley before serving.
Notes
- Use fresh tomatoes for best flavor.
- Adjust seasoning to preference.
