A fresh and healthy salad featuring green beans and feta cheese.
Ingredients

- 2 cups fresh green beans
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt, to taste
- Pepper, to taste
Instructions
- Trim the ends of the green beans.
- Boil water in a pot and cook the green beans for 4-5 minutes.
- Drain and rinse the green beans under cold water.
- In a large bowl, combine the green beans, cherry tomatoes, feta cheese, and red onion.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- Use fresh green beans for the best flavor.
- Feta cheese can be replaced with goat cheese if desired.
- This salad can be made ahead of time and stored in the fridge.
