Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup corn (optional)
  • 1/2 cup sour cream (for serving)
  • Chopped cilantro (for garnish)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add cooked chicken and sauté for 2 minutes.
  3. Add white beans, green chiles, chicken broth, cumin, garlic powder, onion powder, salt, and pepper.
  4. Bring to a simmer and cook for 15 minutes.
  5. If using, add corn and heat through.
  6. Serve hot, topped with sour cream and cilantro.

  • You can adjust the spice level by adding more green chiles.
