Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup spinach
  • Juice of 1 lemon

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. While quinoa cooks, season chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  5. Grill chicken for about 6-7 minutes on each side until cooked through.
  6. Let chicken rest for 5 minutes, then slice.
  7. In a bowl, layer quinoa, spinach, cherry tomatoes, and avocado.
  8. Add sliced chicken on top and drizzle with lemon juice.
  9. Serve immediately.
