Ingredients

- 1 cup quinoa
- 2 cups water
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 cup spinach
- Juice of 1 lemon
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- While quinoa cooks, season chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
- Grill chicken for about 6-7 minutes on each side until cooked through.
- Let chicken rest for 5 minutes, then slice.
- In a bowl, layer quinoa, spinach, cherry tomatoes, and avocado.
- Add sliced chicken on top and drizzle with lemon juice.
- Serve immediately.
Notes
- Quinoa can be cooked ahead of time and stored in the fridge.
- Feel free to add other vegetables of your choice.
- Use leftover chicken for a quick meal.
