Description
A fresh and vibrant grilled corn steak salad.
Ingredients
Scale
- 2 ears of corn
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat the grill to medium-high heat.
- Husk the corn and brush with olive oil, salt, and pepper.
- Grill the corn for 10-15 minutes, turning occasionally, until charred.
- Remove corn from grill and let cool.
- Cut the kernels off the cob into a bowl.
- Add cherry tomatoes, avocado, red onion, and cilantro to the bowl.
- Squeeze lime juice over the salad and toss gently.
- Serve immediately.
Notes
- For added flavor, you can sprinkle feta cheese on top.
- This salad is best served fresh.
