Ingredients
- Halloumi cheese – 200g
- Bread of choice – 4 slices
- Olive oil – 2 tablespoons
- Lettuce – 1 cup
- Tomato – 1 medium, sliced
- Cucumber – 1 small, sliced
- Red onion – 1/2 small, thinly sliced
- Hummus – 1/4 cup
Instructions
- Preheat a grill or grill pan over medium heat.
- Slice the halloumi cheese into 1/2 inch thick slices.
- Brush both sides of the halloumi slices with olive oil.
- Grill the halloumi for 2-3 minutes on each side until golden brown.
- Toast the bread slices on the grill for 1-2 minutes.
- Spread hummus on each slice of bread.
- Layer with lettuce, tomato, cucumber, red onion, and grilled halloumi.
- Top with another slice of bread and serve immediately.
