These Grinch Mini Cheesecakes are festive desserts perfect for the holiday season.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1/2 cup green food coloring
- 1 package graham cracker crumbs
- 1/4 cup melted butter
- Mini chocolate chips for decoration
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of mini cheesecake cups.
- In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
- Fold in whipped cream and green food coloring until combined.
- Pour the cheesecake mixture over the crust in the cups.
- Bake for 20 minutes, then let cool.
- Chill in the refrigerator for at least 2 hours.
- Top with mini chocolate chips before serving.
