These Grinch Mini Cheesecakes are festive desserts perfect for the holiday season.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1/2 cup green food coloring
  • 1 package graham cracker crumbs
  • 1/4 cup melted butter
  • Mini chocolate chips for decoration

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of mini cheesecake cups.
  4. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Fold in whipped cream and green food coloring until combined.
  6. Pour the cheesecake mixture over the crust in the cups.
  7. Bake for 20 minutes, then let cool.
  8. Chill in the refrigerator for at least 2 hours.
  9. Top with mini chocolate chips before serving.
