These Grinch Mini Cheesecakes are festive treats perfect for the holiday season.
Ingredients

- 8 oz cream cheese
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1/2 cup sour cream
- 2 large eggs
- Green food coloring
- Graham cracker crumbs
- Red candy hearts for decoration
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, mix well.
- Incorporate sour cream and eggs, mix until combined.
- Add green food coloring until desired color is achieved.
- Line a muffin tin with cupcake liners and fill each with graham cracker crumbs.
- Pour the cheesecake mixture over the crumbs.
- Bake for 20-25 minutes.
- Let cool and refrigerate for at least 2 hours.
- Top with red candy hearts before serving.
