Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until soft.
- Add ground turkey, cook until browned.
- Add sweet potatoes and bell pepper.
- Season with paprika, cumin, salt, and pepper.
- Cook until sweet potatoes are tender, about 15 minutes.
- Garnish with fresh parsley before serving.
Notes
- Use a lid to speed up cooking of the sweet potatoes.
- Add other vegetables like zucchini or spinach for variety.
- Leftovers can be stored in an airtight container in the fridge.
