Description
A healthy and hearty dish made with ground turkey and sweet potatoes.
Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Stir in ground turkey until browned.
- Add sweet potatoes, bell pepper, black beans, cumin, paprika, salt, and pepper.
- Cook for 10-15 minutes until sweet potatoes are tender.
- Transfer mixture to a baking dish and top with cheese if desired.
- Bake for 20 minutes or until cheese is melted and bubbly.

- Use any vegetables you have on hand.
