A healthier version of broccoli chicken casserole that’s both nutritious and delicious.
Ingredients

- 2 cups cooked chicken, shredded
- 2 cups broccoli florets
- 1 cup brown rice, cooked
- 1 cup low-fat cheddar cheese, shredded
- 1 can low-sodium cream of chicken soup
- 1/2 cup low-fat milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine chicken, broccoli, brown rice, cheese, cream of chicken soup, milk, and spices.
- Mix well until all ingredients are combined.
- Transfer the mixture to a greased casserole dish.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly.
Notes
- Use leftover chicken for a quicker preparation.
- Feel free to add other vegetables like carrots or bell peppers.
- You can substitute rice with quinoa for a different texture.
