Ingredients

- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup grated carrots
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
- Add grated carrots, honey, applesauce, almond milk, and vanilla to the dry ingredients.
- Mix until just combined. Fold in walnuts if using.
- Line a muffin tin with liners and fill each cup 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes before transferring to a wire rack.

- Store muffins in an airtight container for up to 3 days.
- These muffins freeze well; wrap individually and store in the freezer.
