Ingredients

  • 1 teaspoon ground cinnamon
  • 1/2 cup grated carrots
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  3. Add grated carrots, honey, applesauce, almond milk, and vanilla to the dry ingredients.
  4. Mix until just combined. Fold in walnuts if using.
  5. Line a muffin tin with liners and fill each cup 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool for 5 minutes before transferring to a wire rack.
