Description
A lighter version of classic chicken alfredo using cauliflower sauce.
Ingredients

- 1 lb chicken breast
- 2 cups cauliflower florets
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- 8 oz fettuccine pasta
Instructions
- Cook fettuccine according to package instructions.
- In a pot, steam cauliflower until tender.
- In a skillet, heat olive oil and add minced garlic.
- Add chicken breast and cook until golden brown and cooked through.
- Blend cooked cauliflower with chicken broth and Parmesan until smooth.
- Combine the cauliflower sauce with cooked chicken.
- Mix in drained fettuccine and stir well.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- Use fresh parsley for garnish.
- Can substitute chicken with shrimp or tofu.
- Adjust thickness of sauce with more or less chicken broth.
