Description

A lighter version of classic chicken alfredo using cauliflower sauce.


Ingredients

Scale
  • 1 lb chicken breast
  • 2 cups cauliflower florets
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 8 oz fettuccine pasta

Instructions

  1. Cook fettuccine according to package instructions.
  2. In a pot, steam cauliflower until tender.
  3. In a skillet, heat olive oil and add minced garlic.
  4. Add chicken breast and cook until golden brown and cooked through.
  5. Blend cooked cauliflower with chicken broth and Parmesan until smooth.
  6. Combine the cauliflower sauce with cooked chicken.
  7. Mix in drained fettuccine and stir well.
  8. Season with salt and pepper to taste.
  9. Serve warm.

Notes

  • Use fresh parsley for garnish.
  • Can substitute chicken with shrimp or tofu.
  • Adjust thickness of sauce with more or less chicken broth.
