Ingredients

- 2 boneless, skinless chicken breasts
- 8 oz whole wheat fettuccine
- 2 cups cauliflower florets
- 1 cup low-sodium chicken broth
- 1 cup skim milk
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook fettuccine according to package instructions.
- In a pot, steam cauliflower until tender.
- In a skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper, then cook until browned and cooked through.
- Remove chicken and let rest, then slice.
- In the same skillet, add garlic and sauté for 1 minute.
- Add steamed cauliflower, chicken broth, and milk to the skillet. Blend until smooth.
- Stir in parmesan cheese and season to taste.
- Toss cooked fettuccine in the sauce.
- Serve with sliced chicken on top and garnish with parsley.
