Description
A healthy twist on classic meatloaf served with creamy mashed potatoes.
Ingredients

			- 1 lb ground turkey
 - 1 cup oats
 - 1/2 cup chopped onions
 - 2 cloves garlic, minced
 - 1 egg
 - 1/4 cup ketchup
 - 1 tsp salt
 - 1/2 tsp pepper
 - 2 lbs potatoes
 - 1/2 cup skim milk
 - 2 tbsp butter
 
Instructions
- Preheat oven to 350°F (175°C).
 - In a bowl, combine turkey, oats, onions, garlic, egg, ketchup, salt, and pepper.
 - Form the mixture into a loaf shape and place in a baking dish.
 - Bake for 1 hour or until cooked through.
 - Meanwhile, peel and chop potatoes.
 - Boil potatoes in salted water until tender.
 - Drain and mash with milk and butter.
 - Serve meatloaf with mashed potatoes.
 
Notes
- Use ground chicken for a leaner option.
 - Add vegetables to the meatloaf for extra nutrition.
 - Store leftovers in the fridge for up to 3 days.
