Ingredients

  • 2 cups cooked quinoa
  • 1 cup almond flour
  • 1/2 cup ground flaxseed
  • 1/4 cup honey or maple syrup
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix cooked quinoa, almond flour, ground flaxseed, baking powder, and salt.
  3. In another bowl, whisk together honey, olive oil, and eggs.
  4. Combine wet and dry ingredients and mix until smooth.
  5. Pour the mixture into a greased loaf pan.
  6. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. Let cool before slicing.
