Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine chickpeas, tomatoes, cucumber, onion, and parsley.
  4. Add the cooked quinoa to the bowl.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and mix well.
  7. Serve chilled or at room temperature.
