Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add cooked chicken, white beans, corn, chicken broth, cumin, and chili powder.
  3. Simmer for 20 minutes.
  4. Stir in Greek yogurt until well combined.
  5. Season with salt and pepper.
  6. Serve hot.
